It seems that every kid can sing the jingle...I can! But, somehow when they are 'homemade' they are so much better. I tend to use what ever I have on hand. Another one of my favorite cooking, cook once serve as many times as you can!
1 can Grands Biscuits
Fillings: meats, cheeses, veggies, what ever you have on hand. (today it was: steak, oven potatoes, cheddar, zucchini and squash)
Start by pressing the biscuits as flat as you can. Mix your filling together and place a heaping spoonful or
two on one side. Fold over and press to seal. Place on a baking stone and bake for 20 minutes or until lightly browned. For little ones I cut them in half to let the steam escape, they will be very HOT!
Makes: 6 Hot Pockets

Mom! What's for Lunch Monday! Pigs in a Blanket
I'm sure everyone who went through Home Ec in the 80-90s made these at least once! I think I learned with canned biscuits. I managed to have 2 extra friends for lunch so I made extra.
4 hot dogs (your favorite)
1 package of crescent rolls
Preheat oven to package directions. Cut hot dogs in half, take the crescent roll from the fat end and roll the hot dog. Lay seem side down on baking sheet. Bake for 15 mins, or until the bread is lightly brown.
Serve with your favorite dipping sauce and sides! They make kids happy!! Also good for party snacks!
Makes: 8 Snuggly Piggies

Ice Tup Tuesday! Toffee Fudgecicles
This happy treat is very simple to make!
1 large box instant chocolate pudding.
2 cups whole milk (I know, I know, the calories! But when cooking it is best to use the full fat versions of dairy products) You can use skim or 2% but it's not as creamy.
~1/2 cup of Heath bits
Make the pudding according to the directions on the box. And gently fold in the bits. Pour evenly in the molds, seal and freeze!

Mommy! What's for Lunch Monday-Cheesy Sketty
I'm all about the cook one serve twice ideas, and having little boys I will cherish getting to do this for as long as I can!
We had made spaghetti the night before, so it became easy to decide what to make for lunch. Just heat up the leftovers, add a little water. And when it's all heated through add lots of shredded cheddar cheese. This is where the cheesy comes in. And for some reason, this makes it better than just "spaghetti"
I had some left over french bread as well, so I made some cheese toast. Butter one side of the bread and top with cheese. Toast till cheese is bubbly.

Mommy! What's for Lunch-OctoDog!
Ok, so summer brings lots of BBQs and that means hot dogs a lot! What to do with the left overs...get creative!
Enter OctoDogs!! Gently warm up the hot dogs, or cook them. And then cut half way in half then cut 2 quarter turns...it will make 6 legs...but...it works. Then take and lay so the legs are all around. I like to take the favorite choice dipping sauce and make 'starfish' around the legs and serve with gold fish!
A true ocean fun lunch!

IceTup Tuesday! Rainbow Popsicles
These are a childhood memory...I remember mom making all kinds of popsicles for us with these magical things! And of course chewing on the ends...when we were done...much like my children have! I remember getting to help make them and enjoying them all summer long. When Philip was a baby I bought mine off of eBay because Tupperware had discontinued them. They bring them back every now and then, last time they were Mickey Mouse ones. I'm getting 2 more sets soon so we can share with friends or make different ones at a time. Thru the summer on Tuesdays I hope to give you a new fun idea to make homemade popsicles for your little ones or just a treat for you & friends! Enjoy!
2 small bananas
8-10 ripe strawberries
2 kiwi
1 handful of blueberries
In individual bowls..mash each fruit well with a fork that's it! Children can help with this...it's fun and everyone likes making a mess!
Once mashed, take the one with the least and put in the bottom, ours was banana, then blueberries, kiwi and strawberries. Tap lightly to settle, add a little more if needed. Just make sure you can still seal them up.
Seal, and freeze! You can do this with little dixie cups and popsicles sticks if you don't have molds. Just carefully add each fruit to get a good band of color.
And now, because my kids are so cute...here they are enjoying them!!

Mommy What's for Lunch Monday- Scrambled Toad in the Hole
Yes, this is technically a breakfast food, but when you add cheese and serve it for lunch it's a lunch food! Thank you to the lovely land of England for giving us this lovely food! Normally I would fry the egg...but my kids will not eat a fried egg. So I thought why not scramble it?!
I cut it into fourths for the little one. But the bigger kids can pick up and eat!

Mommy What's for Lunch Monday!
Store Bought Ready Made Soup!
Before you think I am a wonderful mother...let me give you background...I am asthmatic, have been since I was 13, (Thank you Arkansas!) When I got pregnant with Philip my sypmtoms went away and stayed away to the point I got off my meds, until my 20th week of pregnancy with Anthony! So, that being said, I hadn't felt well for 2 weeks, up at night coughing and having attacks. This Monday, I woke up and couldn't move, so, I called Brent home & off to the ER we went! But of course lunch had to still be had!
Safeway Ready Made Soup to the rescue! My favorite is the Chicken Enchalada, I like to add cup up avacado, cheese and crunched up tortilla chips. The kids love it too!! Add a little bread & butter, because it's still soup, must have bread with soup and Viola! What's for lunch! Of course Tony, munched on the avacado by itself, and ate bread soaked in soup, he's such a funny monkey, he won't eat soup off a spoon, but off of bread!

Mommy What's for Luch Monday- Cracker Sandwiches
What's in the pantry? Crackers, Nutella (happiness in a jar, as I like to call it) & peanut butter!
Yes, it's that simple, I remember doing this when I was a kid, it's still a sandwich but it's crackers!
And what kid doesn't like chocolate? If they don't, try a jam, I like to mix it up if I'm using jam, it's less messy!
Find some fruit to go with it and viola! Lunch, no heating up the kitchen involved! And it travels nicely for a picnic!

Mommy! What's for Lunch? Mondays- Pinwheels
Being a mom, there is always that question...about 11:30 every day. Most of the time it's I don't know...or the good ole sandwich, that's good, but sometimes you want to do something different. Miranda to the rescue!! I will try to make them all toddler friendly, since I have one! ;0) And hopefully it will inspire you to come up with some lunch fun for your kiddos using what's in the fridge & pantry!
